As a chef in the skilled profession of cookery, you need to be creative with food. You also have to understand the science of food (including food safety), changing kitchen technologies and the business aspects of catering operations. The kitchen is at the heart of all sectors of tourism and hospitality and, with a never-ending sequence of meals to prepare for customers, work can be demanding. In return, a good chef will enjoy status, respect and a rewarding salary. There is always a need for qualified chefs in hotels, restaurants, hospitals, industrial catering, airports, the licensed trade and on cruise liners. Career promotion can be rapid, from commis chef to head chef or executive chef. Many chefs have opened their own restaurants.

This Advanced Certificate in Professional Cookery (FETAC Level 6) prepares you for employment as a professional chef in the tourism and hospitality industry. Training covers the theory and practice of professional cookery and includes 4 months’ work placement in businesses each year. The course is delivered on a day/block release basis over 3 years.

 

Minimum Entry Requirements

The course is open to all EU students - Leaving Cert (any type) required. Industry experience is desirable. Applicants must over the age of 17 in the year of entry or hold a National Skills certificate.

Graduates of the National Certificate in Culinary Skills Programme gain exemption from year 1 and can complete the programme on a part-time basis over 2 years.

Classical Cuisine, Global Cuisine, Mediterranean Cuisine, Pastry, Healthy Options, Buffet Presentations, Menu Planning, Gastronomy, Nutrition, Food Safety, Introduction to Business, Information Technology, Restaurant Service and Catering Systems.

Progression

Graduates may progress from this programme to Bachelor of Arts in Culinary Art (part-time) or compatible degree programmes.

Professional Recognition

Career Opportunities

The course will qualify you to find professional employment as a third year commis chef in hotels, restaurants, licensed trade, cruise ships, industrial and hospital catering and in other food-related businesses.
